The purpose of this blog is to journal my life as a vegan. I started this journey in July of 2010 after reading books like the China Study and watching documentaries like Earthlings. I am now living a high carb low fat whole plant based/vegan lifestyle and am very active in running/cycling/swimming and yoga. I want to spread the word about how to live a healthy life of abundance and consciousness regarding the health of our planet and all the beings that inhabit it.

OMG this Thanksgiving was amazing. The food was sooo good. I am so stuffed along with everyone in my family. They were amazed at how satisfying the food was. The quoinoa loaf was so good and the rice stuffed pumpkins were to die for. Cranberry salsa was a hit along with the creamy vegan mashed potatoes. I was able to get a pic of the appetizers early on but once the main food went down on the table it did not last...lol I feel so blessed this year and feel so good to eat healthy and not contribute slaughtering of the poor turkeys! Unfortanately I did not have time to make the pumpkin pies or the parsnip mash but the holidays are not over....so I'll get to those soon. Ugghh long day at work tomorrow ahead of me and lots of work on Sat as well... no time to recover from FIBER overload haha.

Thanksgiving
I am so excited about thanksgiving this week. I just worked out my menu. It is going to be delish. I will be posting food porn pics of course! Menu so far: Nut/bean loaf and mushroom gravy, mashed potatoes, parsnip mash, cranberry salsa, pumpkin pie, baked spiced apples, raw corn with lime and chili, asparugus, bean free hummus with raw veggies for dipping, wild rice stuffed pumpkins, and gluten free stuffing!!!

Past due

Hey everyone! So yes I have been busy as heck lately working FT as Rehab Manager and seeing 3 home health patients a week for evaluations... Add trying to train for a half marathon and hurting my left ankle in the process! Arg I am so frustrated. I am going to see a Chiropractor tomorrow in hopes that I can recoop for the race on Nov 13 in Coronado ( Silver Strand Half Marathon). I am determined dang it! I have not run since Oct 26th 9 miles... Since then I have been wearing a damn boot to rest bc it kills to walk. X ray was negative. I hope its not a stress fx! Those won't show up on xray for a while. Anyhow I had a bone density test and I passed with flying colors. Bones of a 25 yr old. I have reversed my osteopenia from 2004. :) See pic! Most people think bc I don't do dairy I probably have weak bones..nope sorry dairy actually weakens your bones. Please everyone go read The China Study by Campbell. You will be shocked beyond belief. Dairy and Meat Industries are filthy rich and will do anything to keep the truth of how bad animal protein is for you....Open your eyes and ears to the truth and make your decision about how you want to live.
Update on food...I went to Pheonix AZ last weekend and had the yummiest food at a place called True Food at the Biltmore Mall. Yum! Fresh raw veggies and good wine. Farjallah and I went to a place called Pizza Heaven Bistro bc they had a gluten free crust and Vegan Cheese. OMG yuck I threw it all out.
Well the only way I have been able to keep up my cardio in case I can run on Nov 13 is by riding my bicycle....so I have to get up at the butt crack tmrw (thank goodness for DST) to avoid the storm coming in... Say a prayer form me ya'll. I really wanna run my half! I'll post more often I promise. Oooooh stay tuned for my up and coming menu for Thanksgiving. GF Vegan of course. I am hosting and my family is going to partake and love it I am sure.

Ask me again if I have energy?
So I wanted to share with everyone a pic of me on top of the highest peak in Southern California! Mount San Gorgonio is 11, 501 feet high. My brother (also a veg) and I hiked up there ( the other two did not make it) on September, 11, 2011. People always ask me if I have energy bc I don't eat meat. If anything meat slows you down. Look at nature people! The carnivores sleep the most! Lions and cats who are carnivores sleep most of the time and have short bursts of energy. They have to lounge bc their bodies must digest all that carcass. Humans need energy to sustain us throughout the day... It took us 7 hours to reach the top an elevation gain of 5200. Total of 12 hours to top and back down. I took a whole lot of dried fruit and raw trail mix and water. I think its funny that the two meat eaters who are ten years younger than me threw up 4 times and passed out less than half way there! HAHA Go Vegans! We kick ass!

past due post huh?...

So I know I have been lagging on my blog! Sorry people...busy working taking care of my patients I guess. Anyway I went to Z pizza in Upland a couple of weeks ago and it was delish. So here is a pic of their gluten free Vegan Mexican pizza. They use Daiya. The restaurant was kool kinds fast foodish small but pizza came out quick and I had to send back pizza bc they forgot my avacado! How dare them! Overall it was very tasty. Crust tasted similar to BJs. I will return again....too bad its all the way in Upland.

Living Pea Sprouts!
I want to share with everyone my love for sprouting! As a vegan I have to make sure I get enough protein in my diet so I read that peas have tons of protein. (Most vegan protein powder supplements use pea protein in their blends.) Anyway since I am on the Raw foods bandwagon right now I decided to sprout them. It is actually not easy to find whole dried peas for sprouting. Clark's in Loma Linda only carries split peas which will not sprout but I did find them at Loma Linda Market. The picture I posted is after soaking 9 hours over night and 2 rinses (every 8 hours). Peas are really low calorie too. No fat and only 130 calories in 1/4 cup dried peas with 9g of protein. I think I will eat them tomorrow for lunch :) If you were wondering about my raw foods diet...I will post on that another day. I am about 65-75% raw. Depends on if I am craving pizza then raw goes out the window. I feel raw foods give me so much energy and prevent gas, bloating especially from beans. Seriously people google Mimi Kirk! I also like Ani Phyo. I am looking forward to Medford OR next week. I will be posting on the good bad and or ugly eats up there soon!

Pizza again
So I went to Sammy's Woodfired Grill in Palm Desert yesterday and was so disapointed in their Vegan gluten free pizza! Yuck could not finish it. I guess I remember it being better in San Diego. They use Daiya. The crust was gross. It looked bad visually so I did not bother taking a picture. I prefer BJs crust over this one. Rene's in Tucson is still my fave to date. Anyone out there have any recommendations please let me know! Someone mentioned Z pizza recently. I will have to check it out :)
